CAPE MALAY SMOOR SNOEK

Ingredients

500gm smoked Snoek

2 large Onions

Roughly chopped

2 medium Tomatoes

finely chopped

2 large Potatoes

small dice

1Chilli

ground or finely chopped

ground Black Pepper to taste

Salt to taste

1oz butter

2 Tsp oil

Method

Flake Snoek and put aside, melt butter and oil in pan and fry Onions till golden brown, add Chilli and Potato cook until potato turns light brown or starts to get soft, add tomato, pepper and salt, stir to mix well. add Snoek, mix well and simmer over low heat until potatoes are cooked. Serve on a bed of rice and fruit chutney. It is much better to leave overnight and eat the next day, This dish makes an excellent filling for sandwiches.
