COMMUNICATION FISH CAKES

The name given to this dish is due to being able to get
as many people involved in the preparation as possible

Ingredients

500gm fish

300gm mashed potatoes

4Tbs grated onion

3Tbs finely chopped parsley

pinch grated nutmeg

ground black pepper and salt to taste

Breadcrumbs

oil for frying

1 egg

Tips

TRY TO USE 2 KINDS OF FISH, 1X OILY 1X DRY. IT IS NOT CRITICAL AND ANY FISH CAN BE USED. POTATOES MUST BE MASHED DRY (NO MILK, BUTTER OR SALT) FRESH NUTMEG IS PREFERABLE

Method

Steam or boil fish, flake and remove bones etc, add potato onion, parsley, nutmeg, salt and pepper, mix well, add egg and knead mixture to a rough consistency, make cakes to size required, coat with bread crumbs and fry in medium oil till gold/ brown, drain excess oil by placing on absorbent paper, these cakes keep well and are excellent cold
