Fish in Beer Batter

250ml self-raising Flour
5ml salt
15ml chopped fresh herbs OR 5ml mixed dried herbs
15ml cooking oil
250ml beer
extra flour for coating
800 g frozen hake fillets
cooking oil for frying

Sift flour and salt. Add dried herbs oil and beer

Coat fish with extra flour, dip into batter, and fry in shallow oil. Drain on paper towel.

Tartare Sauce

250ml mayonnaise
2 eggs, hard boiled and finely chopped
10ml finely chopped gherkins, optional
2 spring onions, finely chopped
15ml chopped fresh parsley OR 5ml dried
15ml chjopped fresh tarragon OR 5ml dried

Mix all infredients together well, cover and chill in fridge until ready to serve
